GoodFuel: Mustard Chicken & Spinach Mason Jar Salad

Salad Ingredients

  • 1 cup thinly sliced celery
  • 8 oz cooked chicken breast, boneless, skinless, cut into ½-inch cubes
  • 1 cup red grapes
  • 4 cup fresh spinach
  • 1/4 cup walnut halves

Dressing Ingredients

  • 1/2 cup red wine vinegar
  • 4 tsp olive oil
  • 2 tbsp country-style Dijon mustard
  • 2 tbsp finely chopped tarragon

Directions

  1. Combine vinegar, oil, mustard, and tarragon in a small bowl; whisk to blend. Evenly divide dressing between 4 half-pint Mason jars. Set aside.
  2. Evenly layer celery, chicken, grapes, spinach and walnuts (in that order) on top of dressing into jars.
  3. Serve immediately or cover and refrigerate for up to 3 days. Shake before serving.

Variations

  1. * Almonds – Substitute sliced, toasted almonds for walnuts
    * Apples – Substitute ½ cup apples tossed in 1 tsp. fresh lemon juice for ½ cup grapes
    * Curry Dressing – Substitute ¼ cup reduced fat (2%) plain Greek yogurt and ½ tsp. curry powder for red wine vinegar, mustard, and tarragon
    * Watercress – Substitute watercress for spinach

GoodFuel: Hummus

Ingredients

  • 2 cup canned chickpeas (garbanzo beans), drained
  • 1/3 cup tahini
  • 1 tbsp olive oil
  • 2 garlic cloves
  • 3/4 tsp sea salt
  • 1/2 tsp ground cumin
  • 1/4 cup cold water, or more if needed

Directions

  1. Place the ingredients, except the chickpeas into a food processor and blend until smooth.
  2. Add chickpeas. Process for 3-4 minutes. Pause and scrape the sides down halfway.
  3. Continue until the hummus is smooth. If the consistency is too thick, add water a tablespoon at a time.
  4. Taste and season with additional salt, cumin, and/or lemon juice if needed.
  5. Serve immediately, garnished with your desired toppings. Store in refrigerate for up to 3 days.
  6. Enjoy!
